The Lead Galley Porter has responsibility for the proper organization and sanitation of all galley and storage areas on their shift. He/she will be responsible for ensuring that proper ware washing, storage and organization during their shift achieve the highest standard of quality and cleanliness that the company is aiming for and to stay in full compliance of company policy and procedures. This Lead works with management within the galley department to supervise, train, coach and mentor the galley porters.

Essential Duties & Responsibilities

  • Coordinate with Executive Chef/Executive Sous Chef for an action plan for the current day
  • Ware washing, storage and stocking of all galley equipment, coordinate with staff to ensure that proper par levels of service ware is maintained, and stored in proper place for meal periods
  • Washes all china, silver, glassware and cleans all pots, pans and equipment, as well as generally cleans the galley
  • Cleans fruit, vegetables, potatoes and executes other simple food preparation when directed
  • Assists Cooks with breakfast, lunch and dinner service to ensure an efficient food services for passengers and crew
  • Cleans and sanitizes the whole galley including fridge, freezer, floors, walls and steps, all according to USPH standards
  • Assists in taking food and utensils to their respective service areas for all meals
  • Follow all Company, United States Coast Guard and Federal Drug Administration rules and regulations at all times
  • Conduct pre shift meetings, and conduct closing shift walk-thru to ensure all task are complete
  • Ensure that all sanitation and safety specifications are adhered to during meal period
  • Daily attention to all cost control systems
  • Asset as needed in all mandated inventories and orders for delivery to both galleys
  • Acts as "mentor" to all new porters joining and reports progress to EC/HRM on a weekly basis
  • Periodically schedules themselves on different shifts to ensure consistent operations
  • Reports maintenance issues to engineering and EC. Fills out maintenance request forms when needed
  • Works with Ex. Chef to carry out USPH inspections and maintain logs
  • Helps EC/HD develop performance plans for those who may be deficient or below standard and provided hands-on training, when needed
  • Identifies future Porter Supervisory positions.
  • Assists in loading and unloading during the storage of food, beverages and consumables, etc.
  • Takes part in storage of food and luggage handling, as required
  • Participate and ensure participation of all USCG mandated drills and emergency procedures as directed
  • May be required to perform some housekeeping and cleaning protocols as needed including, but not limited to, trash removal, removal of room service equipment, attend meetings scheduled by the Chief Housekeeper or other members of housekeeping management, use of COVID-19 specific equipment, sanitizers and protocols in order to effectively limit the occurrence and spread of viruses/pathogens
  • Provide assistance to other crewmembers and departments to contribute to the best overall operation of the Company
  • Participate and ensure participation of all USCG mandated drills and emergency procedures as directed
  • Performs other duties if required since above stated describe only a regular working day and may not be inclusive of every task needed to achieve results
  • Requirements & Qualifications

    Education:

  • HS Diploma or Equivalent Required
  • Professional Certification(s) or License:
  • Valid Transportation Worker Identification Credential (TWIC) – if applicable, and/or ability to obtain and maintain
  • Copy of DD214, if Veteran status
  • Skills & Abilities:

  • Excellent verbal and written communication skills
  • Experience:

  • One to two years of experience in a related field
  • Cruise industry experience preferred
  • Other:

  • Must be at least 21 years of age.
  • Submit to and pass alcohol and drug tests as mandated by the USCG including but not limited to pre-employment, random, reasonable suspicion and post-accident/incident testing.
